We need a sweet week in order to end this first month of 2021 and I decided to dedicate it to this recipe, thus I saw it with my own eyes how much my colleagues-cavy who lend themselves to my experiments, liked in the office.
2 trays, 10 min, 4 people and the time to turn around and it was gone! (I think they swallowed it, not even chewed properly!) (continues below)
I have to be honest, when I make this tart it’s because I have to finish some jams in the fridge. I don’t know why I always find myself with 3-4 open jars that after few weeks I have no longer the feeling to finish. So, I “kill” them this way, often mixing them together if the tastes match well with eachother. Today’s in fact, is a mix of 3 jars (orange, lemon and apricot). The beauty of the tart is that lasts days if well preserved (or away from voracious mouths).
Ingredients:
- 250g flour 00
- 150g cold butter cut in squares
- 80 g sugar
- 3 egg yolks
- 1 vanilla essence (can also be without)
- pinch of salt
- 400 g jam (add or decrease according to taste)
The process is very simple. Put all the ingredients on a pastry board, knead, wrap the ball in a transparent foil and let it rest in the fridge for at least 40 min. (continues below)
Take it back, divide the ball into 2 parts 7: 3. Roll out the larger one in a round circle including the sides of the tart. Prick the base with a fork and add the jam. Roll out the rest of the dough in about 4 mm and cut into strips that you will use for decoration. If there is a little more dough left, use it for the edges so that the aesthetic appearance of the tart is also satisfactory. (continues below)
Those who want to be more original, instead of the classic grill on top of the jam, can indulge themselves in infinite shapes and decorations. For example, I love to cut out stars and sprinkle them here and there….
Bake in a preheated oven on 180 degrees until golden brown (about 30/40 min). Remove from the pan ONLY once cold or serve from the form itself. Perfect for breakfast, while hosting guests or just snacks for office/school.
